Description
The black ash burl chefs knife was made from 52100 high carbon steel and features a coffee darkened blade and stabilized black ash burl handle scales. 52100 is an excellent steel choice for culinary knives due to its ability to combine high hardness with high toughness, resulting in greater edge stability and edge retention with finer cutting edges. Added chromium in the steel also lends itself to greater corrosion resistance than other carbon steel blades. The knife was made using the more common production method of stock removal, which consists of cutting out the blade from a sheet of steel and refining it from that point, thus eliminating the forging step and subsequent thermal cycling steps. The scales are attached using stainless steel corby bolts and marine grade epoxy and the tang has been relief milled shifting the balance point forward to the makers mark. The quality materials and simple design make this knife a great everyday user suited to a wide variety of kitchen tasks and most importantly, adds a little more of that “something special” into the cooking experience.
