Available for direct purchase is this 9″ honyaki kiritsuke gyuto. The blade was hand forged from W2 high carbon tool steel and features a high polish and very active, unique hamon.
The handle has been sculpted from Gabon ebony and features fire blackened, faceted heirloom fit steel fittings, and blue dyed maple burl spacers.
The balance point on this gyuto is right at the heel. The heel height is 2″. The blade has a full convex (hamaguri) geometry that is super thin behind the edge and a nice distal taper its entire length.
