Available for purchase is this one of a kind, hand made chefs knife. The Artisan Chefs Knife was forged from W2 high carbon tool steel and features a differentially heat treated blade, an active, polished hamon, and a tsuchime forged finish towards the bolster. The heat treating process made famous by Japanese sword smiths involves coating the spine of the blade in a clay insulator and leaving the cutting edge exposed. At the moment of hardening, the clay slows the rate of cooling compared to the exposed cutting edge resulting in 2 different grain structures in the steel. This is why and how the boundary known as a hamon is formed. The benefit is that you end up with a blade that’s tough enough to flex and still has a cutting edge that benefits from higher hardness. The blade also features a rounded and polished choil and spine, providing maximum comfort for the user.
The western style handle is sculpted from stabilized red amboyna burl and is a hybrid design, featuring both facets and contours and is heirloom fit to an antiqued brass bolster. The handle is secured using marine grade epoxy as well as a polished stainless steel retention nut in the heel of the handle providing a secure mechanical connection and making this a true heirloom quality piece.
